- Brown chicken thighs in the main pot, then remove. Sauté the aromatic vegetables in the fat.
- Add tomatoes, spices, and 4 cups water. Return chicken and simmer for 1.5-2 hours.
- While simmering, cook orzo separately until tender and fry chorizo in a pan.
- Remove chicken, discard bones, and shred the meat. Return to the pot along with the chorizo and shrimp.
- Cook for 5 mins, then stir in the cooked orzo and lemon juice.
