  • 1 cup buttermilk
  • 1 ⁄ 3 cup butter, melted
  • 1 tablespoon sugar
  • 2 tablespoons finely chopped chipotle chiles in adobo sauce (from 7-oz can)
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 cup shredded Cheddar cheese (4 oz)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. 1Preheat the oven to 400°F and coat the bottom of an 8x4-inch or 9x5-inch loaf pan with cooking spray or shortening.
  2. 2Whisk the buttermilk, melted butter, sugar, chopped chipotle chiles, and eggs together in a large mixing bowl. Fold in the flour, cheddar cheese, baking powder, baking soda, and salt until just combined, then transfer the batter to the prepared pan.
  3. 3Bake an 8-inch pan for 45 to 55 minutes, or a 9-inch pan for 40 to 50 minutes, until a toothpick inserted into the center comes out clean. Let the bread rest in the pan on a wire rack for 15 minutes.
