Ingredients

  • 50ml/2fl oz low-sodium soy sauce
  • 50ml/2fl oz mirin
  • 2 tbsp lemon juice
  • 1½ tbsp caster sugar
  • 200g/7oz soba noodles
  • 140g/5oz thin-stemmed broccoli
  • 140g/50z cooked king prawns
  • 1 small red chilli, thinly sliced, to serve

Instructions

  1. 1Combine the soy sauce, mirin, lemon juice, and sugar in a small saucepan over medium heat. Let the mixture simmer for 5 minutes until it reduces into a thick syrup. This reduction concentrates the flavors and helps the sauce cling to the noodles. Remove the pan from the heat and set it aside to stay warm.
  2. 2Bring a large pot of salted water to a rolling boil. Drop in the soba noodles and broccoli, cooking them together for about 3 minutes. Toss the cooked king prawns into the water just a few seconds before draining everything in a colander. Adding the already-cooked prawns at the very end simply warms them through without turning them rubbery.
  3. 3Portion the drained noodle mixture onto plates or shallow bowls. Drizzle the warm homemade teriyaki sauce generously over the top and finish with a scatter of sliced red chili.

Notes

  • Swap: If you're short on time, use a high-quality store-bought teriyaki sauce instead of making the glaze from scratch.
  • Make ahead: You can simmer the teriyaki sauce up to 3 days in advance and store it in the fridge. Reheat gently before serving.
