Spicy Korean Braised Tofu (Dubu Jorim)

Crispy on the outside and impossibly tender within, this traditional Korean braised tofu transforms a plain block of soy into something spectacular. The tofu slices sear until golden before soaking up a deeply savory, spicy soy sauce packed with garlic and toasted sesame. It's a high-protein main that pairs beautifully with a simple bowl of steamed rice. You'll love how the edges catch the rich glaze, making it a dish you'll crave long after the plates are cleared.

Equipment

  • Skillet

Ingredients

  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon Asian sesame oil
  • 1 tablespoon toasted sesame seeds
  • 1 teaspoon Korean chile powder
  • 1 tablespoon vegetable oil

Instructions

  1. 1Remove the tofu from its packaging and set it in a colander to drain excess liquid. Removing surface moisture helps the tofu crisp up properly in the pan.
  2. 2In a small bowl, stir together the chopped green onions, minced garlic, soy sauce, sesame oil, toasted sesame seeds, and Korean chile powder.
  3. 3Slice the drained tofu block in half lengthwise, then cut it crosswise into slices about half an inch thick.
  4. 4Warm the vegetable oil in a large skillet over high heat. Gently lay the tofu slices into the hot skillet in a single layer.
  5. 5Sear the tofu for 4 to 5 minutes until the bottoms turn golden brown and the edges crisp up. Flip each piece to brown the reverse side. Don't rush this step, as the crust prevents the tofu from breaking apart later.
  6. 6Lower the heat and spoon the prepared soy seasoning evenly over the tofu slices. Cover the skillet and let everything steam for 2 to 3 minutes so the tofu absorbs the flavors.

Notes

  • Variation: For extra heat, finely chop half of a seeded jalapeno and stir it into the soy sauce mixture before pouring it over the tofu.
  • Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. The flavors will deepen overnight.
  • Serving: Pair this with freshly steamed short-grain rice and a side of kimchi for a complete meal.
